Thanks for joining me! At the beginning of this year I made it a goal to work on my “community.” I have tried to start slowly but I felt like this would be a good way to connect with some of you that I normally wouldn’t engage with. I am planning to use this page to share my love of cooking, along with my love for Jesus. I have wrestled with how to start and trying to make sure I have the “perfect” first post but if you know me very well, then you know nothing about me is perfect. So I decided to do what I do best and just wing it! I pray this blog will be a blessing to you and maybe teach you a few recipes along the way!
This week I wanted to start with something simple and tell you how I get a good breakfast in as a full time teacher and mom with a busy life. The last month or so I have made it a point to cook breakfast on Sunday mornings, I know, call me crazy. Sunday’s are already busy but it is a good start to our day. While I am cooking I go ahead and cook two additional sausage patties and two additional pieces of bacon. Later on after Sunday lunch I mix up what I call “egg bites” and use them all week as a good grab and go breakfast. Here is how I do it:
10 eggs
1/2 cup milk
1 cup shredded cheese
2 pieces of cooked bacon
2 sausage patties
salt to taste
I beat the eggs in a bowl until all the yolks are busted. Then I add in the milk and salt and whisk again. Once it’s combined well, I crumble the bacon and sausage and add those and then finish with the cheese. I mix all that up and then spray a muffin tin that holds 12 regular sized muffins with non stick spray. Then I dip 1/4 cup into each muffin tin and bake them at 350 for 25 minutes.
These are the perfect breakfast, I grab two every morning and throw them in the microwave for 45 seconds and it’s like having a miniature omelette and keeps me full until lunch.
Another thing that I do that might help some of you full time working mamas is that I try to only cook twice during the week. Let me give you an example:
Monday: lasagna, salad, and bread sticks
Tuesday: leftovers
Wednesday: this is church night and my kids get pizza at church so I grab a bowl of cereal
Thursday: Grilled chicken, green beans, roasted potatoes, rolls
Friday: leftovers
So when I am cooking, I cook enough to feed us for two nights. This relieves some stress of having to cook every single night and keeps us from having to clean up the kitchen every night. It has made our week days so much smoother.
I want to wrap this post up with a little encouragement/challenge for your week. If you don’t know me well, I have a 3 year old and an 8 month old. Something we have started is that every night before bed we pray together as a family. That sounds so great I know, but truth be told we have tried in the past and never stayed consistent. At the beginning of the year it was something my husband and I discussed that we wanted to be consistent with and make it a priority. So far, we have succeeded. But that success isn’t always sunshine and rainbows. Some nights it means stopping mid prayer to discipline a 3 year old who doesn’t want to sit still or cooperate. Other nights its shushing the screaming/tired 8 month old while we just get through it. But it always brings us back to our source. We are so far from the perfect family but we know we serve a perfect savior. Our prayer and goal is to show our children that even though we fail daily, God never does. So I challenge you to pray with your kids every night this week, even if it is chaos. Thank ya’ll for reading, I pray you have a blessed week!
