Zucchini Muffins and Being Faithful

If your zucchini plants have done as well as my dad’s, then your counter is covered in fresh zucchini like mine. It’s not a bad problem to have because I love some fresh veggies, but there are only so many ways to add zucchini to a meal. Lately I have been making a ton of these muffins, and my kids LOVE them and so do I (especially with a cup of coffee). This is what you need:

2 cups all purpose flour

1 1/2 cups sugar

2 tsp baking soda

1 tablespoon cinnamon

1 tsp salt

3 eggs

2 cups fresh grated zucchini

3/4 cup oil

1 tablespoon vanilla extract

1 1/2 cups chopped walnuts or pecans

It is super simple. I mix all the ingredients together at one time and then dip out 1/4 cup into each muffin tin and bake them for 20-25 minutes at 350 degrees. They are the perfect treat!

It has been a while since I have written a blog for a lot of reasons. One reason is that I no longer own a computer and that makes it difficult to write. Another reason is that I have been enjoying a busy summer with my babies and soaking up our time together while also trying to settle into a routine. I’ve also felt like I haven’t had much to say. I think sometimes we can get so busy with things that we forget to rest in God. Often its good things, like enjoying summer break with your babies, but without abiding in Jesus nothing is as good as it could be.

Which is what has happened to me over the last few weeks. I have been fitting Jesus into my schedule instead of fitting my schedule into my time with Jesus. I have noticed how short my temper has been, the anxiety I have felt, racing negative thoughts, you get the point. It’s been frustrating. I haven’t stopped praying or going to church, I just starting “fitting” my time with Jesus in where it was convenient instead of making it a priority at the beginning of the day.

When we do that, our flesh gets the first part of our day instead of our spirit. In my experience, it’s harder to walk in the spirit when you don’t start the day that way. We all fall short and struggle even when we do start the day with Jesus, but I have noticed when I am faithful to start my day with him, he is faithful to help me in all the ways I struggle most. So if you are like me and you haven’t settled into any routine this summer, make your time with Jesus a priority this week, even if it means losing that last 30 minutes of sleep. Love ya’ll!

    Emily, you have no idea how much I needed this! I’ve been in the same situation. And have been more short tempered and ill with everyone. I have even been described as “salty”. Thank you for your post and for the recipe. I have zuchinni too and have been trying different recipes with them. I’ll give the muffins a try!
