Chicken Quesadilla’s

This is one of my favorite week day recipes because I can throw it in the crockpot in the morning and finish whipping it up when I get home. This is what you need:

1-2 pounds of chicken breast

1-2 packs of taco bell fajita seasoning (the amount depends on your amount of chicken)

1/2 jar of your favorite salsa

1/2 cup of water

1 bag of monterey jack cheese (or any white shredded cheese)

1 bag of burrito sized tortilla’s

1 stick of butter left out at room temp

Throw those first 4 things in the crockpot together on low and let them cook all day. If you are doing them for lunch or you get them started late you can do it on high for 4 hours but it’s best if its left on low for 8 hours. When you get home, shred the chicken (this is easiest if you will just stick your hand mixer down in there and turn it on low). Then turn your oven to 400. Get your tortilla’s and coat one side of the tortilla in the softened butter. I use at least 1 tbls, you want it covered. Then lay the buttered side down on a sheet pan and sprinkle with cheese. Then put on a layer of the chicken and sprinkle the top with more cheese. Then add a tortilla to the top that has been generously buttered as well and put the butter side up. They go in the oven for about 8 minutes and then you flip them and cook for another 5 minutes. Those times are estimates just make sure you check them. I like mine extra crispy but if you like it less crispy then flip it sooner. Buy some queso and chips and call it a day!

One thing I want to share this week is also a part of my personal testimony. Did you know that you can go to church every single time the doors are open and the devil doesn’t care? You can do things for Jesus and the devil doesn’t care. If he knows that you don’t really have a relationship with Jesus, he isn’t intimidated. In fact, he loves those people because they cause MANY others to stumble. People look up to them, thinking they have it figured out, when in reality they just want people to think they have it figured out. You know the scariest words in the bible are “depart from me, I never KNEW you.” In Matthew chapter 7 Jesus tells us that on judgement day there will be many people who tell him about all they did in his name. People who prophesied, cast out demons, and did many mighty works, yet he tells them to depart from him because he never knew them. You have to know Jesus, and he has to know you. So don’t be fooled into thinking that just because you go to church you know Jesus. The only way to know him is to be in the word. It is so important to read the Bible for yourself and not rely on a preacher or a teacher to tell you who Jesus is. So this week make time to be in the Word. Don’t just read through your chapter and check it off the list of to do’s. Meditate on it. Ask God to reveal himself to you through his word. You may be surprised at what you find.
