Easy Chicken Quesadillas and Selfish Ambition

It has been a while since I have posted anything. There are a lot of factors that played into that but I am back (and hopefully this time for good). I thought I would share a super simple week night recipe that I often go to for busy days!

Chicken Quesadillas:

2-3 large chicken breasts

2 packs of taco bell fajita seasoning

1/2 jar of your favorite salsa

1/2 cup of water

Put it in the crock pot on low for 8 hours. Then I take my hand mixer and put it inside the crock pot and use it to shred the chicken. It should pull apart easily. While you are doing that go ahead and put your oven on 400 degrees. Before you put the stuff in the crockpot in the morning set out a stick of butter to be softening for the second part.

1 bag of burrito size tortillas

1 bag of quesadilla cheese

1 stick of softened butter

Get a baking pan and lather one side of one tortilla in butter (heavy on the word lather). Lay it onto the pan, butter side down, and sprinkle with cheese. Then layer on some shredded chicken and finish it with another layer of cheese. Then lather a second tortilla in butter and lay it with the butter side facing up. Repeat this process until you run out of meat. The next part is tricky because I never time mine but put them in the oven for about 10 minutes. Then flip and cook for another 3-5 minutes. Check them often. When they are brown and crispy they are ready to go!

God has taught me a ton in this last few months of absence. I have been extremely busy taking care of two kids and starting a new job. It was an extremely difficult transition because I absolutely loved my old job and I struggled with why God brought me here. However, God in is wisdom has slowly been showing me why he has me in the place I am at now. Truly his ways are higher than ours and his thoughts are better than ours. He knows exactly where we need to be in whatever season of life we are in.

On a different note, this morning as I was doing my devotion I started reading in James 3 and 4. Both of those chapters convicted me in ways I can’t even describe but I wanted to share one specific excerpt from James 3: 13-16. It says “Who is wise and understanding among you? Let them show it by their good life, by deeds done in the humility that comes from wisdom. But if you harbor bitter envy and selfish ambition in your hearts, do not boast about it or deny the truth. Such wisdom does not come down from heaven but is earthly, unspiritual, demonic. For where you have envy and selfish ambition, there you find disorder and every evil practice.”

That word demonic really stuck out to me. Harboring bitterness and envy and having selfish ambition is not just unlike Christ, it’s demonic. I don’t know about you but that causes me to pause and really evaluate myself. Am I truly living a life for Christ or am I living a life of selfish ambition?? It goes on to say where those things exist we find disorder and every evil practice. It was a gut check for me and I hope it will be for you too. Are we living our lives selfless and forgiving others of their short comings? I can’t help but think about all the things God has forgiven me for and how selfless he was to leave Heaven and come to Earth to die in my place. What a beautiful example we should strive to live by!

    I really don’t know you Emily but I love the way you have taught Wyatt the word of God. He comes to school a lot telling me about the Bible, He told me this week about David and Jonathon. What a blessing to see and hear children speak of Bible devotions mom and dad have with them. Keep up the good work. I love the spirit Wyatt has for the Lord at such a young age.
